Mashed Tofu Dressing with Seasonal Vegetables
Introduction
Shiraae is a delicate Japanese side dish that combines blanched vegetables with a creamy tofu-based dressing. The word comes from shiro (white) and ae (to mix), referring to the snowy appearance of the mashed tofu coating. While it’s a staple in temple and home cooking across Japan, Okinawan versions often incorporate local greens, carrots, or bitter herbs—turning this dish into both a comfort food and a gentle form of medicine.
Quiet, cooling, and texturally soft, shiraae is often served at room temperature as part of a meal meant to restore harmony. It’s particularly soothing postpartum, during seasonal transitions, or after illness.
Health Notes (Nuchi Gusui)
Tofu: Cooling, protein-rich, and grounding; nourishes yin and supports tissue repair.
Sesame seeds: Strengthen blood, lubricate intestines, and are mineral-rich.
Carrots: Strengthen digestion and brighten the spirit.
Spinach or local greens: Build blood and gently detoxify.
Miso: Supports gut health and adds umami balance to the dish.
Ingredients (Serves 2–3 small bowls)
½ block firm tofu
1 small carrot, julienned
½ bunch spinach or local greens (like nigana or handama)
1 tbsp white sesame seeds (toasted)
1 tsp miso (white or awase)
1 tsp sugar or mirin (optional, to balance bitterness)
A few drops of soy sauce or tamari (to taste)
Pinch of salt
Preparation Tip
To avoid watery dressing, press the tofu gently with a cloth or paper towel before mashing. Toasting sesame seeds fresh and grinding them by hand brings out their full aroma.
Method
Blanch vegetables:
Bring a small pot of water to boil. Blanch carrots for 30 seconds, then remove. Quickly blanch greens until just wilted. Rinse both in cold water and gently squeeze out excess liquid. Set aside.Mash tofu dressing:
Toast sesame seeds and grind them in a suribachi or mortar. Add pressed tofu and mash until creamy. Mix in miso, soy sauce, and sweetener if using. Adjust seasoning to taste.Combine:
Cut blanched vegetables into bite-sized pieces. Add to the tofu mixture and toss gently to coat.Rest and serve:
Let sit for 10 minutes to allow flavors to meld. Serve at room temperature in small bowls.
Serving Suggestion
Serve alongside warm rice, miso soup, and pickled vegetables for a simple healing meal. Shiraae pairs especially well with earthy root vegetables or gentle broths and is traditionally offered during temple meals or as a light seasonal side during spring and fall.
