Shōyu-dare

A basic seasoning blend for marinades, dipping, and simmering

Ingredients:

  • ½ cup soy sauce

  • ¼ cup mirin

  • 2 tablespoons sake

  • 1 teaspoon sugar (optional)

Method:
Combine all ingredients in a saucepan and bring to a gentle simmer. Stir until the sugar dissolves. Cool and store in the fridge for up to 2 weeks.

Uses:
Marinades, seasoning base for soups and noodle broths, or a dipping sauce for dumplings.
